Ingredients
  

Oat Crust and Crumble
  • 1.5 cups rolled oats
  • 1.25 cups all-purpose flour
  • 0.75 cup brown sugar packed
  • 0.5 tsp salt
  • 0.5 tsp baking powder
  • 0.5 tsp cinnamon
  • 0.75 cup unsalted butter melted
  • 1 tsp vanilla extract
Lemon Filling
  • 2 eggs large
  • 0.75 cup granulated sugar
  • 3 tbsp all-purpose flour
  • 0.5 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 0.25 tsp salt
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. Mix oats, flour, brown sugar, salt, baking powder, and cinnamon in a bowl.
  3. Add melted butter and vanilla extract, mixing until crumbly.
  4. Press two-thirds of the mixture into the baking pan to form a crust.
  5. Bake crust for 12 minutes until lightly golden.
  6. Whisk eggs, sugar, flour, lemon juice, lemon zest, salt, and vanilla for the filling.
  7. Pour lemon filling over crust and sprinkle remaining crumble on top.
  8. Bake 22–25 minutes until topping is golden and filling is set.
  9. Cool completely, refrigerate briefly, slice into bars, and serve.

Notes

Chilling the bars before slicing creates cleaner edges and helps the lemon layer fully set.
