- Preheat oven to 375°F (190°C) and grease baking dish.
- Mix oats, baking powder, salt, poppy seeds, and lemon zest.
- Whisk eggs, milk, maple syrup, coconut oil, vanilla, and lemon juice.
- Combine wet and dry ingredients, fold in blueberries.
- Spread into baking dish and top with extra berries.
- Bake 35–40 minutes until golden and set.
- Cool slightly, slice, and serve.
