Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 1 tbsp poppy seeds
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup granulated sugar
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 0.75 cup milk
  • 0.25 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
Lemon Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp lemon juice
  • 0.5 tsp lemon zest

Method
 

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Whisk together flour, poppy seeds, baking powder, baking soda, salt, and sugar.
  3. In another bowl mix melted butter, eggs, milk, lemon juice, lemon zest, and vanilla extract.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Fill muffin cups about three-quarters full with batter.
  6. Bake for 18–20 minutes until golden and a toothpick inserted comes out clean.
  7. Cool muffins on a wire rack.
  8. Whisk powdered sugar with lemon juice and zest to make glaze, then drizzle over muffins.

Notes

For stronger lemon flavor, add extra zest or substitute lemon yogurt for part of the milk.
