Ingredients
  

Lemon Rice Krispy Treats
  • 6 cups crispy rice cereal
  • 4 cups mini marshmallows
  • 0.25 cup unsalted butter
  • 2 tbsp lemon zest freshly grated
  • 2 tbsp lemon juice fresh
  • 0.5 tsp vanilla extract
  • pinch salt
Optional Lemon Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp lemon juice fresh

Method
 

  1. Line a 9x13-inch baking dish with parchment paper or lightly grease it.
  2. In a large saucepan over low heat, melt the butter and add mini marshmallows, stirring until smooth.
  3. Stir in lemon zest, lemon juice, vanilla extract, and a pinch of salt.
  4. Remove from heat and fold in crispy rice cereal until evenly coated.
  5. Press mixture into prepared baking dish using a buttered spatula.
  6. Optional: whisk powdered sugar with lemon juice and drizzle over treats.
  7. Let cool completely for about 1 hour, then slice into squares.
  8. Serve immediately or store in an airtight container.

Use fresh lemons for the best flavor. Store in an airtight container for up to 3 days.
