Ingredients
  

Lentil Filling
  • 1 cup dried lentils green or brown
  • 2.5 cups vegetable broth or water
  • 1 tbsp olive oil
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp turmeric
  • 0.5 tsp chili powder optional
  • salt and pepper to taste
  • 1 tbsp lemon juice
Wrap Assembly
  • 4 large wraps or tortillas
  • 1 cup shredded lettuce
  • 1 cucumber sliced
  • 1 tomato diced
  • 0.5 red onion sliced
  • fresh herbs cilantro or parsley

Equipment

Method
 

  1. Cook lentils in broth until tender, then drain.
  2. Sauté onion and garlic in olive oil until soft.
  3. Add spices and toast briefly for aroma.
  4. Mix cooked lentils into spice mixture and cook briefly.
  5. Finish with lemon juice and adjust seasoning.
  6. Assemble wraps with lentil filling and fresh vegetables.
  7. Roll tightly, slice, and serve.

Store filling separately for meal prep and assemble fresh for best texture.
