  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 2 tsp lime zest
  • 2 tbsp lime juice freshly squeezed
  • 1 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • Optional sugar for rolling or glaze

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add egg, lime zest, lime juice, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture until a soft dough forms.
  5. Scoop dough into small balls and roll in sugar if desired. Place 2 inches apart on baking sheet.
  6. Bake for 10–12 minutes or until edges are lightly golden. Cool 5 minutes on the sheet before transferring to wire rack.
  7. Optional: drizzle with a glaze made from powdered sugar and lime juice once cookies are cooled.

Notes

Cookies keep soft for up to a week in an airtight container. Freezes well for up to 2 months.
