Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 2 tbsp fresh lime juice
  • 1 tbsp lime zest
  • 0.25 cup granulated sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream butter and sugar until light and fluffy.
  4. Add egg, vanilla, lime juice, and lime zest. Mix until combined.
  5. Gradually mix dry ingredients into wet mixture until soft dough forms.
  6. Roll dough into balls and coat with sugar.
  7. Place on baking sheet and flatten slightly.
  8. Bake 10–12 minutes until edges are lightly golden.
  9. Cool on wire rack before serving.

Notes

For stronger citrus flavor, increase lime zest slightly.
