Ingredients
  

Sandwich Base
  • 4 bagels halved
  • 6 eggs large
  • 6 slices bacon
  • 4 slices cheddar cheese
  • 1 avocado sliced
  • 1 tomato sliced
  • 2 tbsp butter
  • 2 tbsp milk or cream
  • salt to taste
  • black pepper to taste
  • 1 tbsp chives chopped

Method
 

  1. Cook bacon in a skillet over medium heat until crispy, about 6–8 minutes.
  2. Transfer bacon to a paper towel-lined plate to drain.
  3. Slice bagels and toast them with butter until golden.
  4. Whisk eggs with milk, salt, and pepper in a bowl.
  5. Cook eggs in a buttered skillet over medium-low heat, stirring gently until soft and fluffy.
  6. Place cheddar cheese over eggs and allow it to melt.
  7. Layer eggs, bacon, avocado, and tomato on the bottom bagel halves.
  8. Sprinkle with chives and top with remaining bagel halves. Serve warm.

Notes

For extra flavor, spread cream cheese or garlic butter on the toasted bagels before assembling.
