- Cook bacon in a skillet over medium heat until crispy, about 6–8 minutes.
- Transfer bacon to a paper towel-lined plate to drain.
- Slice bagels and toast them with butter until golden.
- Whisk eggs with milk, salt, and pepper in a bowl.
- Cook eggs in a buttered skillet over medium-low heat, stirring gently until soft and fluffy.
- Place cheddar cheese over eggs and allow it to melt.
- Layer eggs, bacon, avocado, and tomato on the bottom bagel halves.
- Sprinkle with chives and top with remaining bagel halves. Serve warm.
Notes
For extra flavor, spread cream cheese or garlic butter on the toasted bagels before assembling.
