Ingredients
  

Burrito Bowl Base
  • 2 cups cooked rice
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels fresh, frozen, or canned
  • 2 cups shredded chicken or beef cooked
  • 1 cup diced tomatoes
  • 1 avocado diced
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sour cream or Greek yogurt
  • 1 lime cut into wedges

Equipment

  • Mixing bowls
  • Knife

  • Skillet or pan

Method
 

  1. Cook rice according to package instructions and set aside.
  2. Warm shredded chicken or beef with olive oil and taco seasoning if desired.
  3. Prep vegetables: dice tomatoes and avocado, chop cilantro, and rinse beans.
  4. Assemble bowls: start with rice, then layer black beans, corn, seasoned protein, diced tomatoes, and avocado.
  5. Top with shredded cheese, sour cream or Greek yogurt, fresh cilantro, and lime wedges.
  6. Serve immediately or store components separately for meal prep.

Notes

Optional: add jalapeƱos, salsa, or tortilla strips for extra flavor and crunch.
