Ingredients
  

  • 4 zucchini halved lengthwise
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 cup Greek yogurt full-fat
  • 0.5 cup feta cheese crumbled
  • 1 cup cherry tomatoes chopped
  • 0.33 cup Kalamata olives chopped

Method
 

  1. Preheat grill to medium-high heat.
  2. Brush zucchini with olive oil and season.
  3. Grill zucchini until tender and marked.
  4. Mix yogurt, feta, lemon juice, and herbs.
  5. Fill zucchini and top with vegetables.
