Method
- Whisk olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Toss chicken to coat and marinate.
- Mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, and salt to make tzatziki. Chill.
- Preheat grill or grill pan to medium-high heat.
- Grill chicken 5–7 minutes per side until cooked through. Rest, then slice.
- Warm pita flatbreads on grill or skillet until lightly toasted.
- Spread tzatziki on pita, top with chicken, vegetables, olives, and feta.
- Garnish with herbs, slice, and serve warm.
