Ingredients
  

Grilled Chicken
  • 1.5 lb boneless skinless chicken
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp paprika
  • 0.5 tsp cumin
  • 1 tsp salt
  • 0.5 tsp black pepper
Flatbreads & Toppings
  • 4 Greek pita flatbreads
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes chopped
  • 0.5 cup red onion sliced
  • 0.5 cup feta cheese crumbled
  • 0.25 cup Kalamata olives sliced
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 0.5 cup cucumber grated
  • 1 clove garlic grated
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 0.25 tsp salt

Method
 

  1. Whisk olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper. Toss chicken to coat and marinate.
  2. Mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, and salt to make tzatziki. Chill.
  3. Preheat grill or grill pan to medium-high heat.
  4. Grill chicken 5–7 minutes per side until cooked through. Rest, then slice.
  5. Warm pita flatbreads on grill or skillet until lightly toasted.
  6. Spread tzatziki on pita, top with chicken, vegetables, olives, and feta.
  7. Garnish with herbs, slice, and serve warm.

Notes

Serve immediately for best texture. Store components separately if making ahead.
