Method
- Boil salted water and cook lobster ravioli until tender. Drain and set aside.
- Melt butter in a skillet over medium heat.
- Sauté garlic and shallots until fragrant and soft.
- Add white wine and reduce slightly.
- Stir in lemon juice and lemon zest.
- Lower heat and add cream if using.
- Mix in parmesan cheese until smooth.
- Season with salt and pepper.
- Toss ravioli in sauce gently and serve with parsley.
Notes
Do not overcook ravioli. Keep sauce on low heat after adding lemon to prevent separation.
