Ingredients
  

Pasta
  • 18 oz lobster ravioli fresh or store-bought
  • 1 tbsp salt for pasta water
Lemon Butter Sauce
  • 6 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 piece shallot finely chopped
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp lemon zest
  • 1/4 cup white wine optional
  • 1/2 cup heavy cream optional
  • 1/3 cup parmesan cheese freshly grated
  • 2 tbsp parsley chopped
  • to taste salt and black pepper

Equipment

  • Skillet
  • Strainer

Method
 

  1. Boil salted water and cook lobster ravioli until tender. Drain and set aside.
  2. Melt butter in a skillet over medium heat.
  3. Sauté garlic and shallots until fragrant and soft.
  4. Add white wine and reduce slightly.
  5. Stir in lemon juice and lemon zest.
  6. Lower heat and add cream if using.
  7. Mix in parmesan cheese until smooth.
  8. Season with salt and pepper.
  9. Toss ravioli in sauce gently and serve with parsley.

Notes

Do not overcook ravioli. Keep sauce on low heat after adding lemon to prevent separation.
