Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss potato fries with olive oil and spices until coated.
- Spread fries in a single layer on baking sheet and bake 25–30 minutes, flipping halfway.
- Cook bacon until crisp and crumble. Slice green onions and jalapeños.
- Transfer fries to oven-safe dish and sprinkle cheddar cheese. Return to oven 3–5 minutes until melted.
- Top with bacon, green onions, and jalapeños. Drizzle with hot sauce if desired.
- Serve immediately with sour cream on the side.
Notes
Soaking potatoes beforehand can increase crispiness. Adjust spices to taste.
