Ingredients
  

  • 4 large russet potatoes cut into fries
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sliced green onions
  • 1/4 cup pickled jalapeños sliced
  • 1/4 cup sour cream
  • 2 tablespoons hot sauce optional

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss potato fries with olive oil and spices until coated.
  3. Spread fries in a single layer on baking sheet and bake 25–30 minutes, flipping halfway.
  4. Cook bacon until crisp and crumble. Slice green onions and jalapeños.
  5. Transfer fries to oven-safe dish and sprinkle cheddar cheese. Return to oven 3–5 minutes until melted.
  6. Top with bacon, green onions, and jalapeños. Drizzle with hot sauce if desired.
  7. Serve immediately with sour cream on the side.

Notes

Soaking potatoes beforehand can increase crispiness. Adjust spices to taste.
