Ingredients
  

  • 4 zucchini sliced thin
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 1 cup low-sugar marinara sauce
  • 2 cups mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • 0.75 cup pepperoni sliced

Method
 

  1. Preheat oven to 400°F (205°C) and grease a baking dish.
  2. Salt zucchini slices and rest for 10 minutes, then pat dry.
  3. Toss zucchini with olive oil and seasonings.
  4. Layer zucchini, sauce, cheese, and toppings in the dish.
  5. Repeat layers and bake uncovered for 25–30 minutes.
  6. Rest for 10 minutes before slicing and serving.
