Banana Cake Batter
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar packed
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 cup mashed ripe bananas
  • 0.5 cup sour cream
Cream Cheese Frosting
  • 0.5 cup unsalted butter softened
  • 8 oz cream cheese softened
  • 2.5 cups powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line baking pan.
  2. Whisk together flour, baking soda, baking powder, salt, and cinnamon.
  3. Cream butter and sugars until light and fluffy. Add eggs and vanilla.
  4. Mix in mashed bananas, then alternate dry ingredients with sour cream.
  5. Pour batter into prepared pan and smooth top.
  6. Bake until a toothpick inserted comes out clean. Cool completely.
  7. Beat butter and cream cheese until smooth. Add powdered sugar and vanilla.
  8. Frost cooled cake, slice, and serve.

Notes

For best flavor, use very ripe bananas with dark peels.
