Ingredients
  

Butterfly Pea Tea Base
  • 2 cups water
  • 2 tbsp dried butterfly pea flowers
  • 3 cups cold water
  • 0.5 cup fresh lemon juice
  • 0.33 cup sugar or honey adjust to taste
  • 1 cup ice cubes
  • 1 lemon slices for garnish
  • 5 leaves mint leaves optional
  • 3 edible flowers optional

Equipment

  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Bring 2 cups of water to a boil and steep butterfly pea flowers for 5–7 minutes.
  2. Strain the flowers from the tea and allow the liquid to cool slightly.
  3. Stir sugar or honey into the warm tea until fully dissolved.
  4. Add cold water and mix well.
  5. Slowly stir in fresh lemon juice and watch the color transform from blue to purple.
  6. Fill glasses with ice and pour the lemonade over the ice.
  7. Garnish with lemon slices, mint, and edible flowers before serving.

Notes

Serve lemon juice separately for a dramatic color-changing presentation at parties.
