Ingredients
  

  • 1 cup coconut milk unsweetened
  • 6 tbsp chia seeds
  • 1 cup mango diced or blended
  • 1 cup dragon fruit diced or blended
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 0.5 tsp lime zest optional

Method
 

  1. Whisk coconut milk, chia seeds, vanilla, maple syrup, and lime zest until combined.
  2. Let sit 5 minutes, then whisk again to prevent clumps.
  3. Divide mixture into two bowls.
  4. Stir mango into one bowl and dragon fruit into the other.
  5. Cover and refrigerate at least 4 hours or overnight.
  6. Layer puddings into jars, garnish, and serve chilled.
