Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 2 tbsp sugar
  • 0.25 cup shredded coconut optional
Filling
  • 16 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 0.5 cup coconut milk
  • 1 cup mango puree
  • 1 tbsp gelatin
  • 3 tbsp water warm
Topping
  • 0.5 cup mango puree
  • 0.25 cup toasted coconut flakes

Equipment

  • Mixing bowls

Method
 

  1. Mix crust ingredients and press into lined pan. Chill 20 minutes.
  2. Beat cream cheese until smooth, then mix in sugar and vanilla.
  3. Add coconut milk and mango puree, mixing until smooth.
  4. Dissolve gelatin in warm water and mix into filling.
  5. Pour filling over crust and smooth top.
  6. Refrigerate at least 4 hours until set.
  7. Top with mango puree and toasted coconut.
  8. Slice into bites and serve chilled.

Notes

Use ripe mangoes for best flavor. Chill thoroughly before slicing for clean edges.
