- Mix crust ingredients and press into lined pan. Chill 20 minutes.
- Beat cream cheese until smooth, then mix in sugar and vanilla.
- Add coconut milk and mango puree, mixing until smooth.
- Dissolve gelatin in warm water and mix into filling.
- Pour filling over crust and smooth top.
- Refrigerate at least 4 hours until set.
- Top with mango puree and toasted coconut.
- Slice into bites and serve chilled.
Notes
Use ripe mangoes for best flavor. Chill thoroughly before slicing for clean edges.
