Ingredients
  

Slaw
  • 4 cups green cabbage shredded
  • 2 cups purple cabbage shredded
  • 2 ripe mangoes peeled and julienned
  • 2 carrots shredded
  • 1 red bell pepper thinly sliced
  • 0.5 cup fresh cilantro chopped
  • 0.25 cup green onions sliced
  • 0.25 cup roasted peanuts optional
Dressing
  • 3 tbsp lime juice fresh
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp fresh ginger grated
  • 1 tsp soy sauce

Method
 

  1. Combine shredded cabbage, carrots, bell pepper, mangoes, cilantro, and green onions in a large bowl.
  2. Whisk together lime juice, olive oil, honey, rice vinegar, ginger, and soy sauce.
  3. Pour dressing over slaw ingredients.
  4. Toss thoroughly to coat evenly.
  5. Refrigerate for 15–20 minutes.
  6. Top with roasted peanuts before serving if desired.

Notes

Best served fresh. Store dressing separately for make-ahead preparation.
