- Wash, peel, and slice the carrots into evenly sized diagonal pieces.
- Cook chopped bacon in a large skillet over medium heat until crispy.
- Remove bacon with a slotted spoon and drain on paper towels.
- Leave about 2 tablespoons bacon grease in the skillet and add butter.
- Stir in garlic and cook briefly until fragrant.
- Add carrots and toss well to coat.
- Pour in maple syrup and sprinkle brown sugar over the carrots.
- Season with salt and black pepper.
- Cover and cook for 12 to 15 minutes until carrots are tender.
- Remove lid and continue cooking until glaze thickens.
- Return crispy bacon to the skillet and toss gently.
- Garnish with parsley and thyme before serving warm.
