  • 2 pounds whole carrots peeled and sliced diagonally
  • 8 slices bacon chopped
  • 3 tbsp butter
  • 0.33 cup pure maple syrup
  • 1 tbsp brown sugar
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh thyme leaves optional

Method
 

  1. Wash, peel, and slice the carrots into evenly sized diagonal pieces.
  2. Cook chopped bacon in a large skillet over medium heat until crispy.
  3. Remove bacon with a slotted spoon and drain on paper towels.
  4. Leave about 2 tablespoons bacon grease in the skillet and add butter.
  5. Stir in garlic and cook briefly until fragrant.
  6. Add carrots and toss well to coat.
  7. Pour in maple syrup and sprinkle brown sugar over the carrots.
  8. Season with salt and black pepper.
  9. Cover and cook for 12 to 15 minutes until carrots are tender.
  10. Remove lid and continue cooking until glaze thickens.
  11. Return crispy bacon to the skillet and toss gently.
  12. Garnish with parsley and thyme before serving warm.

Notes

Use pure maple syrup for the richest flavor and avoid overcooking the carrots to maintain their texture.
