Method
- Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
- Whisk together flour, baking powder, baking soda, salt, and brown sugar.
- In a separate bowl, combine buttermilk, eggs, butter, maple syrup, and vanilla.
- Pour wet ingredients into dry and stir until just combined.
- Fold in most of the chopped bacon, reserving some for topping.
- Spoon batter into muffin cups, filling 3/4 full, and sprinkle remaining bacon on top.
- Bake for 18–22 minutes or until golden and set.
- Cool slightly before drizzling with maple glaze.

Store muffins in an airtight container for up to 3 days or freeze for longer storage.
