  • 4 boneless skinless chicken breasts
  • 2 large sweet potatoes peeled and cubed
  • 3 tbsp olive oil
  • 3 tbsp Dijon mustard
  • 3 tbsp pure maple syrup
  • 3 cloves garlic minced
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp fresh thyme or 1/2 tsp dried

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together olive oil, Dijon mustard, maple syrup, garlic, vinegar, paprika, salt, pepper, and thyme.
  3. Toss sweet potatoes with half the glaze and arrange on one side of the pan.
  4. Place chicken breasts on the other side and brush with remaining glaze.
  5. Bake for 25–30 minutes, flipping chicken halfway through.
  6. Broil for 2–3 minutes for caramelization, then let rest 5 minutes before serving.

Notes

Use real maple syrup for best flavor. Add extra veggies like carrots or Brussels sprouts if desired.
