Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together olive oil, Dijon mustard, maple syrup, garlic, vinegar, paprika, salt, pepper, and thyme.
- Toss sweet potatoes with half the glaze and arrange on one side of the pan.
- Place chicken breasts on the other side and brush with remaining glaze.
- Bake for 25–30 minutes, flipping chicken halfway through.
- Broil for 2–3 minutes for caramelization, then let rest 5 minutes before serving.
Notes
Use real maple syrup for best flavor. Add extra veggies like carrots or Brussels sprouts if desired.
