Marinated Grilled Mushroom Skewers

Ingredients
  

Marinade
  • 0.25 cup olive oil
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup or honey
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • 2 tbsp chopped fresh parsley
Skewers
  • 1.5 lbs mushrooms whole, button or cremini
  • 1 red onion cut into chunks (optional)
  • 1 red bell pepper cut into 1-inch pieces (optional)

Method
 

  1. Clean mushrooms and cut larger ones in half for uniform size.
  2. Whisk all marinade ingredients in a bowl until well combined.
  3. Toss mushrooms in marinade, cover, and refrigerate 30–120 minutes.
  4. Preheat grill to medium-high heat and oil the grates.
  5. Thread mushrooms (and vegetables, if using) onto skewers.
  6. Grill 10–12 minutes, turning and basting with marinade until tender and slightly charred.
  7. Serve immediately with parsley and lemon wedges.

Notes

Marinate mushrooms longer for deeper flavor. Works great with portobello or oyster mushrooms too.
