Method
- Clean mushrooms and cut larger ones in half for uniform size.
- Whisk all marinade ingredients in a bowl until well combined.
- Toss mushrooms in marinade, cover, and refrigerate 30–120 minutes.
- Preheat grill to medium-high heat and oil the grates.
- Thread mushrooms (and vegetables, if using) onto skewers.
- Grill 10–12 minutes, turning and basting with marinade until tender and slightly charred.
- Serve immediately with parsley and lemon wedges.
Notes
Marinate mushrooms longer for deeper flavor. Works great with portobello or oyster mushrooms too.
