  • 1 lb cheese tortellini fresh or refrigerated
  • 1 lb chicken breasts sliced thinly
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 0.5 cup sun-dried tomatoes chopped
  • 0.5 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.25 tsp red pepper flakes or more to taste
  • 0.5 tsp paprika
  • salt and pepper to taste
  • fresh basil for garnish

Equipment

Method
 

  1. Cook tortellini according to package directions, drain, and set aside.
  2. Season chicken with salt, pepper, paprika, and Italian seasoning.
  3. Heat olive oil in a skillet and sear chicken until golden and cooked through. Remove and set aside.
  4. Add butter to the skillet, sauté garlic until fragrant, and stir in sun-dried tomatoes.
  5. Pour in chicken broth and heavy cream. Simmer until slightly thickened.
  6. Stir in Parmesan and red pepper flakes.
  7. Return chicken to skillet and fold in cooked tortellini. Toss to coat.
  8. Garnish with basil and serve warm.

Notes

Use freshly grated Parmesan for the smoothest sauce.
