Method
- Season chicken with salt and pepper. Heat olive oil in a pot and sear chicken until cooked through. Remove and set aside.
- Sauté onion and garlic until fragrant and translucent.
- Add sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Bring to a simmer.
- Slice or shred cooked chicken and return to the pot.
- Stir in heavy cream and simmer 5–7 minutes.
- Add spinach and Parmesan cheese, stirring until wilted and incorporated. Adjust seasoning.
- Serve hot, garnished with fresh basil.
Notes
For best flavor, use oil-packed sun-dried tomatoes. Soup can be made a day ahead.
