Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • salt and black pepper to taste
  • 4 cloves garlic minced
  • 1 small onion diced
  • 1 cup sun-dried tomatoes chopped
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • 0.5 tsp crushed red pepper flakes optional
  • 1 cup heavy cream
  • 2 cups fresh baby spinach
  • 0.5 cup grated Parmesan cheese
  • fresh basil for garnish

  • Large pot or Dutch oven

Method
 

  1. Season chicken with salt and pepper. Heat olive oil in a pot and sear chicken until cooked through. Remove and set aside.
  2. Sauté onion and garlic until fragrant and translucent.
  3. Add sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Bring to a simmer.
  4. Slice or shred cooked chicken and return to the pot.
  5. Stir in heavy cream and simmer 5–7 minutes.
  6. Add spinach and Parmesan cheese, stirring until wilted and incorporated. Adjust seasoning.
  7. Serve hot, garnished with fresh basil.

Notes

For best flavor, use oil-packed sun-dried tomatoes. Soup can be made a day ahead.
