Ingredients
  

Casserole Base
  • 8 slices sourdough bread thick cut
  • 3 tbsp butter softened
  • 6 slices bacon cooked and chopped
  • 1.5 cups cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 cup cherry tomatoes halved
  • 0.5 red onion thinly sliced
  • 1 cup fresh spinach leaves
  • 2 tbsp chives chopped
Custard Mixture
  • 4 eggs large
  • 1.5 cups milk
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.25 tsp paprika optional

Method
 

  1. Preheat oven to 375°F (190°C). Butter a 9x9-inch baking dish.
  2. Butter both sides of bread slices and toast until golden.
  3. Layer bread, cheese, bacon, tomatoes, onions, spinach, and chives in the dish.
  4. Whisk together eggs, milk, salt, pepper, garlic powder, and paprika. Pour over layers.
  5. Let rest 15–30 minutes, then bake uncovered for 30–35 minutes until golden and bubbly.
  6. Cool slightly, garnish with chives, and serve warm.

Notes

Make ahead by assembling and refrigerating overnight. Bake in the morning for brunch.
