Ingredients
  

Chicken Meatballs
  • 1 lb ground chicken
  • 2 cloves garlic minced
  • 1/4 cup almond flour
  • 1/4 cup Parmesan cheese grated
  • 1 egg large
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes optional
Garlic Butter Sauce
  • 3 tbsp unsalted butter
  • 3 cloves garlic minced
  • 1 tsp fresh parsley chopped
  • 1/2 tsp paprika
  • to taste salt and pepper
Cauliflower Rice
  • 4 cups cauliflower rice fresh or frozen
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • to taste salt and pepper

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, minced garlic, almond flour, Parmesan, egg, oregano, salt, black pepper, and red pepper flakes.
  3. Form mixture into 1.5-inch meatballs and place on prepared baking sheet.
  4. Bake for 18–20 minutes until internal temperature reaches 165°F (74°C).
  5. While meatballs bake, melt butter in a saucepan over medium heat. Add minced garlic and sauté 1–2 minutes.
  6. Stir in parsley, paprika, salt, and pepper. Remove from heat.
  7. Toss baked meatballs in garlic butter sauce until evenly coated.
  8. Heat olive oil in a skillet over medium heat. Add cauliflower rice, garlic powder, salt, and pepper, and sauté 5–7 minutes until tender.
  9. Divide cauliflower rice among meal prep containers, top with garlic butter meatballs, and garnish with parsley.
