Ingredients
  

Meatloaf
  • 2 lbs ground beef 85% lean
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 0.5 cup milk
  • 0.75 cup breadcrumbs
  • 2 eggs large
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried thyme or 1 tbsp fresh
  • 0.5 tsp smoked paprika optional
Mushroom Gravy
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 8 oz mushrooms sliced
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tsp Worcestershire sauce
  • 0.5 tsp salt adjust to taste
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and grease a loaf pan.
  2. Soak breadcrumbs in milk for 2–3 minutes, then add beef, onions, garlic, eggs, and seasonings.
  3. Mix until combined and shape into loaf; bake 45–50 minutes until 160°F internally.
  4. Meanwhile, sauté mushrooms in butter and oil until golden.
  5. Add onions and garlic; cook 2–3 minutes. Sprinkle flour, stir, and gradually whisk in broth.
  6. Add Worcestershire, salt, and pepper; simmer 5–8 minutes until thickened.
  7. Slice meatloaf and spoon mushroom gravy over top before serving.
