  • 2 cups cauliflower rice
  • 2 chicken breasts cubed
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 0.5 cup cucumber diced
  • 0.33 cup Kalamata olives sliced
  • 0.25 cup red onion chopped
  • 0.33 cup feta cheese crumbled
  • 1 lemon juiced

Method
 

  1. Cook seasoned chicken in olive oil until golden and fully cooked.
  2. Sauté garlic, then add cauliflower rice and cook until tender.
  3. Add tomatoes and cook briefly.
  4. Return chicken to skillet and mix.
  5. Add cucumber, olives, onion, and lemon juice.
  6. Top with feta and parsley, then serve.

Notes

Add fresh herbs and lemon juice after cooking for best flavor.
