Ingredients
  

Chicken Marinade
  • 2 lbs boneless skinless chicken
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 4 cloves garlic minced
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp salt
  • 0.5 tsp black pepper
Creamy Feta Tzatziki
  • 1.5 cups Greek yogurt
  • 0.5 cup feta cheese crumbled
  • 1 cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
Assembly
  • 6-8 pita breads
  • 1 cup cherry tomatoes halved
  • 0.5 red onion sliced

Method
 

  1. Whisk marinade ingredients and coat chicken. Refrigerate at least 30 minutes.
  2. Mix yogurt, feta, cucumber, garlic, lemon juice, and dill for tzatziki. Chill.
  3. Cook chicken in grill pan 5-7 minutes per side until internal temperature reaches 165°F.
  4. Rest chicken, then slice thinly.
  5. Warm pita and assemble with chicken, vegetables, and tzatziki.

Notes

For best flavor, marinate chicken 2-4 hours. Drain cucumber thoroughly before mixing tzatziki.
