Ingredients
  

Mediterranean Salad
  • 2 cups cherry tomatoes halved
  • 1 large cucumber diced
  • 1 red bell pepper chopped
  • 0.5 red onion thinly sliced
  • 0.5 cup Kalamata olives pitted and sliced
  • 0.5 cup feta cheese crumbled or cubed
  • 0.25 cup fresh parsley chopped
Dressing
  • 0.25 cup extra-virgin olive oil
  • 2 tbsp lemon juice fresh
  • 1 clove garlic minced
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

Method
 

  1. Chop tomatoes, cucumbers, bell pepper, and onion. Add to a large bowl.
  2. Add olives, feta, and parsley; toss gently.
  3. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.
  4. Pour dressing over salad and toss to combine.

Notes

For meal prep, store dressing separately until ready to serve.
