Ingredients
  

Rice Base
  • 1 cup long-grain rice
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes chopped
  • 2 cups vegetable broth
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp oregano
  • 2 tbsp parsley chopped
  • 0.25 cup feta cheese optional

Method
 

  1. Rinse rice under cold water until clear.
  2. Heat olive oil in a saucepan over medium heat.
  3. Sauté garlic and sun-dried tomatoes until fragrant.
  4. Add rice and toast for 1-2 minutes.
  5. Pour in broth and add seasonings.
  6. Bring to boil, then cover and simmer 15-18 minutes.
  7. Let rest, then fluff with a fork.
  8. Stir in parsley and feta before serving.

Notes

Add lemon juice for brightness and extra herbs for more flavor.
