Method
- Rinse rice under cold water until clear.
- Heat olive oil in a saucepan over medium heat.
- Sauté garlic and sun-dried tomatoes until fragrant.
- Add rice and toast for 1-2 minutes.
- Pour in broth and add seasonings.
- Bring to boil, then cover and simmer 15-18 minutes.
- Let rest, then fluff with a fork.
- Stir in parsley and feta before serving.
Notes
Add lemon juice for brightness and extra herbs for more flavor.
