Ingredients
  

Greek Chicken
  • 1.5 lb boneless chicken
  • 0.25 cup olive oil
  • 2 tbsp lemon juice fresh
  • 3 cloves garlic minced
  • 2 tsp dried oregano
Rice
  • 1.5 cups long-grain rice
  • 3 cups chicken broth
Tzatziki
  • 1 cup Greek yogurt
  • 0.5 cup cucumber grated

Equipment

Method
 

  1. Marinate chicken with olive oil, lemon juice, garlic, and spices for at least 30 minutes.
  2. Cook rice in chicken broth with lemon zest until fluffy.
  3. Mix tzatziki ingredients and chill.
  4. Cook chicken in skillet until golden and cooked through.
  5. Assemble platter with rice, sliced chicken, vegetables, and sauce.
