Ingredients
  

Potatoes
  • 2 lb baby potatoes halved
  • 0.5 cup unsalted butter melted
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 cup Parmesan cheese optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and halve the potatoes lengthwise.
  3. Mix melted butter, olive oil, and garlic in a bowl.
  4. Arrange potatoes cut-side down on the baking sheet.
  5. Brush generously with butter mixture and season with salt and pepper.
  6. Roast for 45–55 minutes until golden and fork-tender.
  7. Garnish with herbs and serve hot.

Best served fresh for maximum crispness.
