Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash and halve the potatoes lengthwise.
- Mix melted butter, olive oil, and garlic in a bowl.
- Arrange potatoes cut-side down on the baking sheet.
- Brush generously with butter mixture and season with salt and pepper.
- Roast for 45–55 minutes until golden and fork-tender.
- Garnish with herbs and serve hot.
