- Combine chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, and pepper in a small bowl.
- Rub chicken with olive oil and seasonings. Squeeze lime juice over the chicken.
- Cook chicken in a skillet over medium-high heat for 5–6 minutes per side until fully cooked.
- Allow chicken to rest for 5 minutes, then slice into thin strips.
- Blend mayonnaise, chipotle pepper, lime juice, garlic, and salt until smooth.
- Toast the telera rolls until lightly crispy and golden.
- Spread warm refried beans on the bottom halves of the bread.
- Layer chicken, cheese, avocado, lettuce, tomatoes, onions, jalapeños, and cilantro onto the sandwiches.
- Drizzle with chipotle sauce and close the sandwiches with the top bread halves.
- Serve warm and enjoy immediately.
Notes
For extra flavor, grill the assembled sandwiches for 1–2 minutes before serving. Rotisserie chicken can also be used for quicker preparation.
