Ingredients
  

Casserole Base
  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 1 small onion diced
  • 3 cloves garlic minced
  • 14.5 oz diced tomatoes undrained
  • 15 oz black beans rinsed and drained
  • 1 cup corn
  • 2 cups beef broth
  • 2 cups shredded Mexican-blend cheese

Equipment

  • Large skillet
  • 9×13 inch baking dish
  • Aluminum foil
  • Wooden spoon

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Cook onion and ground beef in a skillet until beef is browned.
  3. Stir in garlic, spices, tomatoes, beans, corn, rice, and broth.
  4. Transfer mixture to baking dish, cover tightly with foil, and bake 40 minutes.
  5. Remove foil, top with cheese, and bake uncovered 10–15 minutes.
  6. Rest briefly before serving.

Notes

Allow casserole to rest before slicing for best texture.
