Ingredients
  

Casserole Base
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 10 oz Rotel tomatoes undrained
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 2 cups shredded Mexican blend cheese divided
  • 3 cups tortilla chips crushed
  • 1 cup corn drained
  • 15 oz black beans rinsed and drained

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Brown ground beef in a skillet over medium heat and drain excess fat.
  3. Stir in taco seasoning and Rotel tomatoes; simmer 2–3 minutes.
  4. Add cream cheese and stir until melted and smooth.
  5. Mix in sour cream, corn, and black beans; remove from heat.
  6. Layer half the crushed chips in the baking dish, top with beef mixture.
  7. Sprinkle with half the cheese, then remaining chips and cheese.
  8. Bake uncovered for 25–30 minutes until bubbly and golden.

Notes

Let casserole rest 5 minutes before serving for best texture.
