Ingredients
  

Meatballs
  • 1 lb ground beef
  • 0.5 cup Italian breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 1 egg large
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp dried oregano
Subs
  • 8 mini sub rolls
  • 1 cup marinara sauce warmed
  • 1 cup shredded mozzarella cheese

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, parsley, salt, pepper, and oregano.
  3. Form the mixture into 1.5-inch meatballs and place on the baking sheet.
  4. Bake for 12–15 minutes until cooked through and lightly browned.
  5. Warm mini sub rolls in the oven for 3–4 minutes.
  6. Assemble subs with a spoon of marinara, 2–3 meatballs, additional sauce, and mozzarella.
  7. Broil for 2–3 minutes until cheese melts and bubbles.
  8. Garnish with parsley or Parmesan and serve.

Notes

Meatballs can be baked ahead and stored in fridge or freezer for easy meal prep.
