Ingredients
  

Meatloaf Muffins
  • 1.5 lbs ground beef 80/20
  • 0.5 cup breadcrumbs
  • 0.5 cup milk
  • 1 small onion finely minced
  • 2 cloves garlic minced
  • 1 egg lightly beaten
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp smoked paprika
Mashed Potato Frosting
  • 2 lbs russet potatoes peeled and chopped
  • 4 tbsp butter
  • 0.5 cup milk warm
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
  2. Combine beef, breadcrumbs, milk, onion, garlic, egg, ketchup, Worcestershire sauce, and seasonings. Mix until just combined.
  3. Divide evenly into muffin cups and press lightly.
  4. Bake for 20–25 minutes until cooked through and golden.
  5. Boil potatoes until tender, mash with butter and milk, season with salt and pepper.
  6. Pipe mashed potatoes over each mini meatloaf muffin and garnish with parsley.

Notes

For extra flavor, drizzle gravy over the potato frosting before serving.
