Ingredients
  

Batter
  • 2 cups chopped dates
  • 1 cup boiling water
  • 1 tsp baking soda
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 2 eggs large
  • 1 tsp vanilla extract
  • 1 cup chopped walnuts

Method
 

  1. Preheat oven to 350°F (175°C). Prepare a loaf pan with parchment paper.
  2. Soak chopped dates in boiling water and baking soda for 10 minutes.
  3. Whisk dry ingredients together in a bowl.
  4. Cream butter and sugar, then add eggs and vanilla.
  5. Combine wet and dry mixtures, then fold in dates and walnuts.
  6. Pour into pan and bake for 50–60 minutes.
  7. Cool before slicing and serving.

Notes

For extra moisture, add a tablespoon of yogurt or milk to the batter.
