- Preheat oven to 400°F (200°C). Prepare a baking sheet with parchment or flour.
- Whisk together flours, baking soda, salt, and brown sugar in a large bowl.
- In another bowl, mix buttermilk, molasses, and melted butter until smooth.
- Combine wet and dry ingredients gently until a soft dough forms.
- Shape dough into a round loaf and place on baking sheet.
- Score a deep cross on top and sprinkle oats if desired.
- Bake 35–40 minutes until golden brown and hollow-sounding when tapped.
- Cool on wire rack before slicing and serving.
Notes
For best results, avoid overmixing the dough. Bread can be frozen for up to 2 months.
