Ingredients
  

Main Ingredients
  • 2.5 lb beef chuck roast cubed
  • 3 tbsp all-purpose flour
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 4 carrots sliced
  • 4 potatoes cubed

Equipment

Method
 

  1. Coat beef with flour, salt, and pepper.
  2. Brown beef in olive oil and transfer to slow cooker.
  3. Sauté onion and garlic, then add to slow cooker.
  4. Add remaining ingredients and cook on LOW for 8 hours.

Notes

For thicker stew, stir in cornstarch slurry during last 30 minutes.
