Ingredients
  

Base
  • 1 cup quinoa
  • 2 cups water or broth
  • 1 can chickpeas drained
  • 1 sweet potato cubed
  • 1 zucchini sliced
  • 1 bell pepper chopped
  • 2 cups kale chopped
  • 1 avocado sliced
Dressing
  • 3 tbsp tahini
  • 2 tbsp lemon juice
  • 1 tbsp maple syrup
