Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 0.25 cup granulated sugar
Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 eggs large
  • 1 cup sour cream
  • 0.5 cup heavy cream
  • 2 tbsp Earl Grey tea leaves
  • 1 tsp vanilla extract
  • 1 tbsp lemon zest
Topping
  • 2 cups mulberries
  • 0.33 cup sugar
  • 2 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water

Equipment

Method
 

  1. Preheat oven to 325°F and prepare springform pan.
  2. Mix crust ingredients and bake for 10 minutes.
  3. Infuse cream with Earl Grey tea and cool.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs, sour cream, infused cream, vanilla, and zest.
  6. Pour filling into crust and bake in water bath.
  7. Cool gradually, then refrigerate thoroughly.
  8. Prepare mulberry topping and spread over cheesecake before serving.

Notes

For best flavor, chill overnight and garnish with fresh mulberries before serving.
