Ingredients
  

Pasta
  • 12 oz spaghetti
  • salt for boiling water
Sauce
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 5 cloves garlic minced
  • 10 oz mushrooms sliced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp crushed red pepper flakes optional
  • 0.25 cup pasta water reserved
  • 0.5 cup grated Parmesan cheese
  • 2 tbsp fresh parsley chopped

Method
 

  1. Cook spaghetti in salted water until al dente. Reserve 1/4 cup pasta water and drain.
  2. Heat olive oil and butter in a skillet. Sauté sliced mushrooms until golden brown.
  3. Add minced garlic and cook briefly until fragrant.
  4. Season with salt, pepper, and crushed red pepper flakes.
  5. Add cooked spaghetti and toss with sauce, adding pasta water to loosen if needed.
  6. Stir in Parmesan cheese and garnish with parsley before serving.

Notes

For a creamy version, add 1/2 cup of heavy cream or cream cheese. For extra umami, stir in a splash of soy sauce or miso.
