- Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
- Cut puff pastry into portions and score a border around each piece.
- Sauté shallots in olive oil until softened, then add mushrooms and cook until golden.
- Stir in herbs, season, and let mixture cool slightly.
- Mix goat cheese with milk or cream until smooth.
- Spread goat cheese inside pastry borders and top with mushroom mixture.
- Bake 18–22 minutes until puffed and golden.
