Ingredients
  

Pastry Base
  • 1 sheet puff pastry thawed
Filling
  • 2 cups mushrooms sliced
  • 2 shallots thinly sliced
  • 2 tbsp olive oil
  • 4 oz goat cheese softened
  • 1 tbsp fresh thyme chopped
  • 1 tsp fresh rosemary chopped
  • 1 tbsp milk or cream

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
  2. Cut puff pastry into portions and score a border around each piece.
  3. Sauté shallots in olive oil until softened, then add mushrooms and cook until golden.
  4. Stir in herbs, season, and let mixture cool slightly.
  5. Mix goat cheese with milk or cream until smooth.
  6. Spread goat cheese inside pastry borders and top with mushroom mixture.
  7. Bake 18–22 minutes until puffed and golden.

Notes

Serve warm or at room temperature for best texture and flavor.
