Ingredients
  

Salad Base
  • 4 cups mixed leafy greens
  • 1 cup shredded purple cabbage
  • 1 cup grated carrots
  • 1 cucumber sliced
  • 1 avocado sliced
  • 2 tbsp pumpkin seeds
  • 2 tbsp sunflower seeds
Lemon Dressing
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp raw honey
  • 1 clove garlic minced

Equipment

  • Large mixing bowl
  • Small bowl or jar
  • Whisk
  • Chef knife

Method
 

  1. Wash and dry all vegetables thoroughly.
  2. Combine leafy greens, cabbage, carrots, and cucumber in a large bowl.
  3. Add fresh herbs and toss gently.
  4. Whisk together all dressing ingredients until emulsified.
  5. Drizzle dressing over salad and toss lightly to coat.
  6. Top with avocado and seeds just before serving.

Notes

For best texture, add avocado and seeds right before serving.
