Method
- Melt butter and brown sugar in a saucepan. Stir in maple syrup and cook until slightly thickened.
- Remove from heat and stir in vanilla extract, oats, cranberries, and pecans until well coated.
- Drop spoonfuls of mixture onto parchment-lined baking sheet and shape into cookies.
- Refrigerate for 30–45 minutes or until firm.
- Serve immediately or store in airtight container.
Notes
Can be stored in the refrigerator for up to 1 week. Optionally drizzle with melted chocolate for extra flair.
