  • 2 cups rolled oats
  • 0.75 cup peanut butter creamy or chunky
  • 0.33 cup honey or maple syrup
  • 0.25 cup mini chocolate chips
  • 2 tbsp chia seeds optional
  • 1 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Combine oats, chia seeds, and salt in a large mixing bowl.
  2. Add peanut butter, honey, and vanilla extract. Mix until a thick dough forms.
  3. Stir in mini chocolate chips and any desired add-ins.
  4. Chill mixture in refrigerator for 20–30 minutes to firm up.
  5. Roll into 1-inch balls and place on parchment-lined baking sheet.
  6. Store in an airtight container in the fridge for up to 1 week.
