Ingredients
  

Energy Ball Mixture
  • 2 cups old-fashioned rolled oats
  • 1 cup creamy peanut butter
  • 0.33 cup honey
  • 0.25 cup mini chocolate chips
  • 0.25 cup ground flaxseed
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 0.25 cup unsweetened shredded coconut

Method
 

  1. In a large bowl, combine rolled oats, flaxseed, chia seeds, shredded coconut, and salt.
  2. Add peanut butter, honey, and vanilla extract. Stir until fully combined.
  3. Fold in mini chocolate chips and any optional add-ins.
  4. Refrigerate the mixture for 15–20 minutes to firm slightly.
  5. Use a cookie scoop or spoon to portion the mixture and roll into bite-sized balls.
  6. Place energy balls on a parchment-lined tray and chill for another 20 minutes.
  7. Serve immediately or store in an airtight container in the refrigerator.

Notes

Store refrigerated for up to 1 week or freeze for up to 3 months. Customize with nuts, dried fruit, or protein powder.
